Banting week 88

Morning all,

So this past week I’ve been having mostly black coffee and I must say I’m really surprised at how quickly I’ve gotten used to it, much faster than getting used to black Rooibos tea, I’m actually enjoying it now. Years back when Ninette was just a little baby and when we bought our first percolator coffee machine I always joked with Sam and said I would like to drink coffee like the people on TV, walk over to the machine pour coffee and drink just like that black with no sugar, well now I am drinking my coffee that way just not from a machine 😉

Sam and I was naughty and had breakfast at Hava Java again, in our defense we did go to the shopping center to pick up some more chicken packs that was on a great special and we enjoy those little moments together 😉

I made low carb granola for the first time and off course I overcooked it a little but luckily it’s still good, I’ll keep a closer eye on the next batch. I decided to make it just for a little more variety as we usually have a cooked breakfast. Yogurt & granola or chia seed porridge things like that really doesn’t keep us as full for as long as a cooked breakfast does, so if I have one of those for breakfast I’ll either add something cooked to have with it or on those days I’ll have some lunch and then dinner.

Monday:

  • Breakfast (11h10) – Spinach & bacon omelette with chilli sauce and black coffee.
  • Lunch – Skipped
  • Dinner (17h20) – Beef curry with sweet potato and caulirice. Black coffee.

Tuesday:

  • Breakfast (11h15) – Bacon, scrambled eggs, fried brinjals & tomato and black coffee.
  • Lunch
  • Dinner (17h30) – Brinjal boats filled with beef mince and topped with cheese and black coffee.

Wednesday:

  • Breakfast (08h30) – 2 Fried eggs, mushrooms, halloumi, avo, small beef patty, bacon & added butter. 2 cups of coffee with cream.
  • Lunch – Skipped
  • Dinner (17h30) – Baked cabbage with bacon bits & garlic topped with cheese sauce. Black coffee.

Thursday:

  • Breakfast (09h10) – Scrambled eggs with chilli flakes, bacon, fried mushrooms, tomato & peppers. Black coffee.
  • Lunch – Skipped
  • Dinner (17h30) – Roast chicken, green beans, pumpkin and carrots. Black coffee.

Friday:

  • Breakfast (08h30) – Yogurt & granola and 2 ham & egg rolls. Black coffee.
  • Lunch – Skipped
  • Dinner (18h15) – Fish pie with mayo, coleslaw, tomato and cucumber. Black coffee.

Saturday:

  • Breakfast (08h45) – Scrambled eggs, bacon, French toast with butter, cheese, homemade jam. Coffee with cream.
  • Lunch – Skipped
  • Dinner (19h00) – Butternut fettuccine, chicken fillet topped with fried pepper, onion, mushroom, tomato mix. Black coffee.

Sunday:

  • Breakfast (11h00) – Scrambled eggs, bacon, creamy tomato brinjals. Coffee with cream.
  • Lunch – Skipped
  • Dinner (17h50) – Roast chicken, cinnamon pumpkin, fried cabbage and green beans.
  • DessertChocolate mug cake with coconut cream. Black coffee.

 

How To:

  • Brinjal boats: Cut brinjals in half-length wise, take out some of the flesh and keep aside. Place the Brinjals on the cut side in a pan on the stove with some coconut oil, fry it on a medium heat turning once when starting to soften. While the Brinjals are cooking fry some mince with chopped tomato, onion and Brinjal flesh and seasoning. Place cooked Brinjal halves in a baking dish, fill with mince filling and top with cheese. Bake in the oven at 180 degrees Celsius until fully cooked and cheese has started turning golden (about 20-30 minutes).
  • Baked cabbage quarter: Cut a whole cabbage into quarters, place each quarter on 2 squares of foil. Add a teaspoon crushed garlic, half a fresh chilli, tablespoon onion flakes, 2 tablespoons butter, salt & pepper and 125 g bacon bits. Wrap the foil tightly around the cabbage. Bake in the oven for 2 hours to get the cabbage nice and tender. Served with cheese sauce.
