Here I am with last week’s menu. It was the last week of the month so meals was made with whatever was left in the fridge.
A while back we got a great special on a whole sheep so we bought one but the only problem now was that the meat is very tough so what were we to do? Well I decided to cook it slowly overnight in a roasting dish with a lid in the oven. I used quite a few packets of meat so I can cook it all at once and then keep it in the fridge for when needed. Once cooked the meat was nice and tender so I could just pull it apart and use it in dishes. And the bonus was a lovely pot of broth that was left behind, this I strained and keep in the fridge then just add it to other meat dishes. This will be the way I cook all the mutton until it’s used up.
I’m not adding a “How To” section this week as there’s no need for it. You’ll see we only had one meal on Sunday.

Monday: Meal 1 (8h30) – Zucchini quiche with bacon bits and butter and coffee with cream. Meal 2 (17h30) – Salad with biltong, tomato, cucumber and lettuce and coffee with cream.
Tuesday: Meal 1 (8h30) – Scrambled eggs with Banting mayo, fried zucchini and baby brinjals with cream cheese & chilli sauce. Coffee with cream. Meal 2 (17h30) – Cabbage rice topped with fried liver in a tomato, onion, & pepper sauce. Coffee with cream.
Wednesday: Meal 1 (8h30) – Quiche made with leftover cabbage rice, tomato & cheese and bacon. Coffee with cream. Meal 2 (17h30) – Pork chop, pumpkin and broccoli and coffee with cream.
Thursday: Meal 1 (8h30) – Scrambled eggs with smoked paprika, fried veg (red cabbage, mushrooms, pepper, spinach) and bacon. Coffee with cream. Meal 2 (17h30) – Mutton pie and a green salad. Coffee with cream.
Friday: Meal 1 (8h30) – Scrambled eggs with fried spinach, fried tomato, bacon and yogurt. Coffee with cream. Meal 2 (18h00) – Open sandwich (my Banting Bread recipe) with lettuce, tomato, cucumber, mutton, BBQ sauce & mayo and coffee with cream.
Saturday: Meal 1 (11h00) – 1 Slice French toast with butter & cheese, 2 fried eggs, fried brinjals, bacon and coffee with cream. Meal 2 (16h00) – Boerewors, Pork chop and savory caulirice salad. Coffee with cream.
Sunday: Meal 1 (14h00) – Roast chicken, whole cabbage and broccoli and coffee with cream.
